Instant Pot Beef Bourguignon Recipe

Instant Pot Beef Bourguignon
I made a delicious Beef Bourguignon in my Instant Pot! It was hard to find an easy to follow recipe online. So I wanted to share how I made it in my Instant Pot. The Instant Pot is great! I highly recommend getting one. If you don't have one you can make this Beef Bourguignon in a pressure cooker on your stove.
 
Instant Pot Beef Bourguignon
serves 4

Ingredients:

1 lb beef stew, organic if you can get it
1/2 pound bacon cut up in 1 inch pieces
5-6 carrots cut in large chunks
12 pearl onions
1/2 cup beef broth
1 cup red wine
2-4 red potatoes, halved or quartered depending on size
1 package of mushrooms
1 tsp pepper
1 tsp salt
1 tsp fresh or dried thyme
2 cloves of garlic minced

Directions:

Saute bacon in the Instant Pot until cooked through. Remove from pan and add stew meat. Brown stew meat in the bacon grease. Add onions to the pan to brown for a few minutes. Then add everything else to the pan. Close led and cook on high pressure for 40 minutes. Do a quick release. Remove everything but the juices from the pan. Cover with foil and make a rue. Turn the pot off and then on saute. Add 1-2 Tbs of butter to the liquid. In a small bowl add about 1/4 cup of the liquid from the pan, add 1 Tbs of flour and mix well with a fork until well combined. Then add to the pan. Stir and boil until the liquid thickens. Pour rue over your dish and enjoy! If you don't have time to make a rue, it's still really good with just the pan juices on it!

Instant Pot Creme Brulee Recipe

For my anniversary my awesome husband bought me an Instant Pot IP Duo! This amazing new kitchen helper is a 7-in-1 multi-functional cooker. It's a pressure cooker, slow cooker, rice cooker, saute/browning, yogurt maker, steamer and warmer. It has 14 built-in smart programs, dual pressure, automatic keep-warm and three temperatures for saute and slow cook.  It's amazing!

I made my first dessert today in the Instant Pot. I actually made three things today, 8 grain cereal, creme brulee, and a delicious roast. Here's my first attempt that turned out great of making Instant Pot Creme Brulee using the Pressure Cooker. It was super easy and only took about 25 minutes total. 5 minutes to prepare, 10 minutes in the pressure cooker, about 10 minutes while the valve slowly released the pressure.

Instant Pot Creme Brulee Recipe

Ingredients:

4 eggyokes
1 pint of heavy whipping cream
1/4 cup of sugar
1 tsp vanilla 
4 ramekins 

Directions:

Mix the eggyokes, heavy whipping cream, sugar, and vanilla together in a medium bowl. Pour the mixture evenly among the four ramekins. Put foil on the top of each ramekin.  Put the little rack that came with your IP at the bottom of the bowl. Pour 2 cups of water in the instant pot. Place the ramekins in the instant pot, you can stack them if needed. Close the led and the make sure the valve is closed. Set the pressure on high for 10 minutes. Let it slow release for 10-15 minutes. Carefully remove the ramekins. Confirm the the creme brulee is set. Set out for about 15 minutes to cool some. Then put in the fridge for 2+ hours. Sprinkle with sugar and torch the sugar if you like.

12 Wonderful Years!!

Collin and I just celebrated our 12th wedding anniversary! What a fun and crazy dozen years these have been! New Year's Eve we stayed home and went to bed before midnight. New Year's Day we took the kids to eat at Texas De Brazil for lunch. It was partly for a nice lunch as well as part of an early anniversary date for our family. We had not eaten there in years. Really since before we moved to Germany 7 years ago. Caden LOVED it!! He was the cutest thing. They seated us upstairs which we will never do again with young kids since the fantastic salad bar is downstairs. I let him ride the elevator upstairs alone to Collin and Jackson while Grace and I were finishing getting our salads. He was so excited to see shrimp on the salad bar. When the first guy came by with the meat on the skewers, Caden proudly said, "yes, I'd love some of that meat. And guess what? I'm six years old and I road the elevator by myself!" He told about 3 or 4 different workers that. He loved the meat and gobbled it up. Grace loved it too as did Collin and I.

On our anniversary, we took the kids to Bravo for lunch. It's a delicious Italian Restaurant. The kids loved it and we ended up getting three desserts! Two of their chocolate molten cake-like desserts with gelato and one cream brulee that was on the house. 

I feel so incredibly blessed to have such a wonderful, kind, Christ-like, loving, supportive husband who loves me and my children so much. Here's to many, many more anniversaries! It seems like we've done so much in these past 12 years and yet in the grand scheme of things, it's really not that long. The biggest changes this past year were the birth of Jackson, changing churches, and Caden attending a part-time school. We all have had our challenges as well as blessings. We are enjoying life with the three kids that God has blessed us with.

Christmas 2015!

This past Christmas was wonderful! It was Grace's 2nd Christmas, Jackson's 1st Christmas, and Caden's 7th Christmas! We let the kids open one gift on Christmas Eve, although we decided to let Caden open two since his first gift was books and he was grateful but you could tell there was a little disappointment that he didn't open a toy. On Christmas Day we went to my parents house. We missed Collin's mom tremendously and of course his dad who is now residing in Heaven. 

Caden got Zoobs, his own kid kindle, a new LeapPad Ultra (which will be shared with his siblings as they get older), books, a helicopter, magic tricks, stilts, and a Leap Frog Video Game system with a few games. He also got a year subscription to Magic School Bus Science Club, a watch, a few tennis shirts, and a flashlight.

Grace got the Grace American girl doll, a baby doll along with some nice baby accessories - stroller, car seat, high chair, bed, and bouncer. She also got some books, puzzles, rainbow blocks, and a dance game for the Leap Frog Video Game system.

Jackson got some car seat toys, chew toys, clothes, some baby toys, standard size big blocks, puzzles, and books. He also got a wagon that he'll share with his siblings. 

Their biggest gift of course was the playground we bought for our backyard which they all LOVE!! We hope you and your family had a wonderful Christmas!! We enjoyed all the activities leading up to Christmas and focusing on learning about Jesus' birth and why God sent him to earth.
